Modeled after the classic “Alpage” cheeses of Switzerland, Maple Valley Creameries Fleur de la Vache is a true artisan cheese. Capturing the extremes of mountains and streams so true of Switzerland Fleur de la Vache is hand crafted and hand turned wheel after wheel. The rich nutritious milk of our pastured Brown Swiss cows combined with the washing of it’s rind with our great mix of fresh herbs influences Fleur de la Vache flavours. This extraordinary cheese has a subtle nutty flowery flavour with a smooth buttery finish. Pair it with a Chardonnay, Riesling or a fine Cabernet.
Saison de la Vache
Maple Valley Creamery’s Saison de la Vache (Season of the Cow) is a seasonal cheese made in the autumn and winter. It is similar to French Munster cheese – not to be confused with the American Muenster.
Saison de la Vache has a soft but firm pate, which is slightly
elastic with a few small holes. It has a light soft smell of rich
raw milk and a relaxed after taste with lingering after notes
of honey and clover.
The aging takes eight weeks during which time the cheese is
washed with a mix of natural bacterium, herbs and salt.
